Cake Competition to celebrate the 80th Anniversary of VE Day.

Cake Competition Monday 5th May At the May Day Picnic.
Would you like to try your hand at making a war time cake recipe? VE Day Condensed Milk Cake Everyone is welcome to try.
Cake entries should be delivered to the Cake Table by 12:30 Monday 5th May 2025 at the May Day Picnic on the Village Green
Deliver your cake by 12:30 pm Judging takes place at 1pm Prizes for 1st and 2nd place Judging by Kate Smith of the Bumblebee Cafe
NB. Please present your entry in a VE style decorated box or background.
VE Day Condensed Milk Cake
Recipe Prep Time – 20 minutes Cook Time – 45 minutes Total Time – 1 hour 5 minutes VE Day Condensed Milk Cake
Ingredients 3ozs (75g) Margarine or Butter 8ozs (225g) Self-Raising Flour, ((OR 8ozs (225g) Plain flour with 4 teaspoons Baking Powder)) 3ozs (75g) Raisins or Sultanas or Mixed Dried Fruit. 1 tablespoon Marmalade or Golden Syrup 6 tablespoons Condensed Milk made up to 1/4 pint (150ml) with water 2 eggs, beaten, fresh or dried
Instructions Rub the margarine or butter into the Self Raising Flour and only add the baking powder if using Plain Flour. Add the dried fruit and mix to a soft consistency with the marmalade, milk and beaten eggs.
Spoon into a greased and/or lined 6″ (15cm) cake tin Bake in a moderate oven (180C to 190C/350F to 375F/Gas mark 4 to 5) Bake for 45 minutes.
NB To check if the cake is cooked, insert a skewer into the middle of the cake, and the skewer should come out clean if the cake is cooked. Cool on a wire rack and serve in slices when cold
This can be baked in a loaf tin, but is more celebratory when baked in a round cake tin.
